Grape Apple Grilled Chicken Salad Sandwich

Serves: 6 | Prep Time: 10 minutes | Total Time: 1 hr, 10 minutes

INGREDIENTS

2 chicken breasts
½ c. diced red onion
½ c. diced apple
½ c. grapes, halved
¼ c. dried cranberries
¼ c. slivered almonds

½ c. plain Greek yogurt
4 leaves lettuce
1 ½ tbsp. lemon juice
½ tsp. garlic powder
Salt and black pepper
3 ciabattas

DIRECTIONS
1. Heat grill (375-450 °F) and brush grates with olive oil to avoid sticking.
2. Brush chicken breasts with olive oil and season both sides with salt and pepper. Grill 4-5 minutes per side until Internal temperature hits about 160 °F.
3. Remove chicken, let rest for 2-3 minutes then finely chop.
4. In a large bowl, combine chopped chicken and remaining ingredients (hold lettuce).
5. Serve on ciabatta and top with lettuce.

Serves: 6 | Prep Time: 10 minutes | Total Time: 1 hr, 10 minutes

INGREDIENTS

1 lb. strawberries, diced
1 lb. pineapple, diced
1 ½ c. blueberries
1 ½ c. raspberries

1 ½ c. red grapes, halves
4 kiwis, diced
1 c. pomegranate seeds
1 ½ c. oranges,diced

DRESSING
¼ cup honey
Zest of 2 medium limes
1 Tbsp. fresh lime juice

DIRECTIONS
1. Mix orange and pineapple juice in a pitcher.
2. Fill champagne flutes half full with juice mixture.
3. Top off glasses with white wine.
4. Serve immediately with strawberry garnish.

Avocado Feta Salad with Tangerine Vinaigrette

Serves: 6 | Prep Time: 10 minutes | Total Time: 1 hr, 10 minutes

INGREDIENTS

2 tbsp. extra-virgin olive oil
2 avocados, sliced
4 tangerines, sliced round
4 c. arugula
2 c. mixed greens

½ c. fresh mint leaves
⅓ c. feta cheese
¼ c. tangerines, diced
Kosher salt, ground pepper

VINAIGRETTE
½ c. fresh tangerine juice
1 small shallot, minced
2 tbsp. white wine vinegar
¼ c. vegetable oil

DIRECTIONS
1. Simmer tangerine juice in a small saucepan until syrupy and reduced to about 2 tbsp., 5–8 minutes. Let cool.
2. Whisk shallot, vinegar and reduced tangerine juice in a medium bowl; season with salt and pepper. Whisk in vegetable oil, then olive oil. Set vinaigrette aside.
3. Toss avocado, tangerine, mint, and vinaigrette in a large bowl; top with feta and additional avocado.
